Animal oil is known in our country, Iran, as Kermanshahi oil. This oil is a dairy product made from the milk of sheep, goats, and cows. Kermanshahi oil is yellow in color and has a semi-solid consistency at room temperature. It is mostly used as a flavoring in dishes cooked with meat and rice. The secret behind the unique taste and aroma of Kermanshahi ghee lies in the pristine and distinctive nature of the region. Livestock in Kermanshah Province feed on forage that grows only in the highlands and mountainous areas of the region. These unique plants, which do not grow in the same way anywhere else in Iran, give a special flavor to the milk and, as a result, to the ghee. In addition, the traditional and authentic method of producing this oil — passed down from generation to generation over centuries — plays a significant role in its quality.
In the traditional method of producing animal oil, first fresh milk is turned into yogurt; then the yogurt is changed into curd and the butter is separated using a musket. This butter is carefully boiled until it reaches complete purity and a clear and fragrant animal oil is obtained. This traditional process, combining art and experience, has given unique characteristics to this Kermanshah oil and made it one of the best and most famous types of animal oil in Iran.
